Wild Irish Rose

Irish Whiskey, Lemon Juice, Honey, Allspice Dram, Cherry Heering
The Story

I was looking for recipes featuring Irish Whiskey and wasn't finding what I wanted, so I tried taking the Wildest Redhead recipe and swapping out the Scotch for Irish Whiskey. I was not disappointed. This is just one example of many where you can "riff" on a recipe by switching out one spirit for another. I searched to see if this variation had a name and came up empty, so I named it the Wild Irish Rose.

Ingredients
  • 2 oz Irish Whiskey (Jameson)

  • ¾ oz Lemon Juice

  • ½ oz Honey Syrup (3:1)

  • ¼ oz Allspice Dram

  • ¼ oz Cherry Heering

Preparation
  1. Add everything but the Cherry Heering to a cocktail shaker with ice

  2. Shake for 8-10 seconds

  3. Double strain into a lowball with a large ice cube

  4. Pour the Cherry Heering on top of the ice cube, it should sink to the bottom.


If you don't have a large ice cube, pour the Cherry Heering over a barspoon so it does not mix into the rest of the cocktail. An inverse "float".
